​​Ingredients​
o 1 kg of semi-sour apples (around 6 medium)
o 3 cups of caster sugar
o 1,5 cups of water
o 4 cups of water (to keep the peeled apples in)
o 1 lemon
o 1 tbs cinnamon
o 1 pack bourbon-vanilla powder
o 1/2 tsp salt​
Preparing​
- peel and cut the apples into cubes.
- place your apple cubes in a bowl of water with 1/2 tsp salt
- pour 1,5 cups of water in a deep pan and add the sugar.
- stir the mixture over medium heat until you get a syrup.
​- strain the water from your apple cubes and add them in the syrup.
- add cinnamon, bourbon-vanilla and the juice of 1 lemon after the apples are softened and let them boil.
- let it cool down.
- when the pan is in room temperature, put aside 1 cup of the liquid. (I used this liquid to bake the cookies for the apple mousse)
- mash the apples until there are no hard bits remained.
- pour your apple mousse in glass jars and keep refrigerated.
