​​​Ingredients
o 140 gr caster sugar
o 2 eggs (at room temperature)
o 245 gr all purpose white flour + enough to shape the dough
o 1/4 tsp salt
o 1 tsp baking powder
o 1 tsp vanilla extract
o 100 gr roughly chopped pistachio (or any type of nuts)
o 100 gr gojiberry (or any type of dried berries that you like)

Preparing​
- beat the eggs, with 140 gr of caster sugar and vanilla for about
3-4 minutes until they look pale yellow and are creamy.
- mix white flour, baking powder and salt in another bowl and blend into your egg mixture slowly.
- finally add the pictachios and goji berries 1 spoon at a time to get a homogeneous mixture.
- stir it with a wooden spoon.
- sprinkle enough flour on your working top to work the dough (it's a sticky dough)
- give your dough a cylindrical shape of about 6-7 cm diameter and 30 cm height. (about the size of a standard rolling pin :D)
​- place baking paper on your tray and again sprinkle some flour on the paper before you place your dough on it.
-take your cyclinder dough on the paper.
- get some flour in your hands and press on it gently to give it a bread like shape. (as in the photo)

Baking
- bake for 18-20 mins. at 180°C pre-heated oven and take it out for it to cool and rest for about 10-15 mins. Remember to lower the oven temperature to 165°C right after you take your tray out.
- slice your 10-15 mins. rested sweet bread with a thickness of 1- 1,5 cm and place the slices horizontally on your tray and bake for 8-10 mins.
- take them out and flip the slices and bake again for 8-10 mins until they get the golden colour that you see in the picture.
